The Star Sydney Doubles Down On ‘Indulgence’ With Japanese Whisky Flights, Caviar & More

The Star Sydney Indulgence festival includes Japanese whisky flights

Ever since Crown Sydney popped up on the fringes of Barangaroo with restaurants like a’Mare and Woodcut, people have been waiting to see how The Star Sydney would respond in kind. After all, the city’s OG casino still boasts destination restaurants like Sokyo and BLACK Bar & Grill, as well as newcomers Cucina Porto and CHUUKA. Clearly hoping to lure back diners, the answer is a new two-month drinking & dining program conceived as The Star Sydney Indulgence festival.

It’s one with considerable heft behind it too. From high-end Japanese whisky flights at Sokyo, and Glenmorangie trolleys at BLACK Bar & Grill, through to a decadent roe service at CHUUKA, and even a specially curated ambient playlist at The Darling Spa from Tame Impala’s Cam Avery.

Throughout the festival spanning from April to May, each venue – Sokyo, BLACK, Flying Fish, Cucina Porto, CHUUKA, and The Darling Spa – will switch their menus up with ‘indulgence’ as the guiding theme. Think silky-textured seafood crudos, premium meats, and theatrical Valrhona chocolate desserts.



In an attempt to engage all five senses, participating venues will be attempting some wildly abstract dining experiences, like BLACK’s Executive Chef, Danny Karam, presenting a $290-for-two high-end meat platter to pair with a Renaissance sculpture created by florist Lisa Cooper.

Another example of The Star Sydney Indulgence festival includes DJ Alex Dimitriades curating a playlist ranging from Japanese funk to Italo disco, paired with Sokyo’s new menu, as well as the offering of four unique flights of Japanese whisky – the most expensive of which is set at $210pp. Each of those flights will be complemented with beef tenderloin tataki and smoked aioli.

Flying Fish chef Peter Robertson has taken The Star Sydney Indulgence theme and run with it. For $130 a pop, the long-standing restaurant will put together a snack platter studded with up-market essentials like caviar, oysters, and sea urchin, alongside several bespoke cocktails.

The Darling Spa one is well worth paying attention to. Aside from a “sonic bath” score from Cam Avery, who is Tame Impala’s bassist, therapists will offer a specialised 90 minute Lit’Ya Mala Mayi treatment for $280, followed by a luxurious Champagne service.
