Constructed from the bones of the old Crowne Plaza, this new IHG outpost has been reimagined into 198 guest rooms โ 22 of which are ocean-facing suites โ each one a study in spacious coastal restraint. Flaunting a stripped-back design of sun-bleached timbers, linen whites, and outdoor baths that lets the view do the heavy lifting, itโs Mediterranean minimalism that feels simultaneously breezy and deliberate.

Essentially, it promises โfresh seafood, simply prepared,โ in a must-try diner that seats 224, overlooking the water for those pleasantly long lunches and even longer evenings. This will effectively mark Steinโs Sydney debut.
Shutters Restaurant & Bar will serve as the InterContinental Sydney Coogee Beachโs other key cuisine hub โ modern Australian with a Mediterranean twist (because what else would it be?) โ and make no mistake, it has no intentions of being an afterthought nor play second string to Rick Stein at Coogee Beach.
