Set to open its doors in December, the InterContinental Sydney Coogee Beach promises a quieter kind of indulgence on Sydneyโ€™s eastern fringe โ€“ where the cityโ€™s edges soften into sea spray โ€“ with what can only be described as a five-star sanctuary

Constructed from the bones of the old Crowne Plaza, this new IHG outpost has been reimagined into 198 guest rooms โ€“ 22 of which are ocean-facing suites โ€“ each one a study in spacious coastal restraint. Flaunting a stripped-back design of sun-bleached timbers, linen whites, and outdoor baths that lets the view do the heavy lifting, itโ€™s Mediterranean minimalism that feels simultaneously breezy and deliberate.

In line with the times weโ€™re living (and the ethos of the area), you can also expect an emphasis on wellness here: sunrise yoga on the beach, private pickleball courts, and, come Phase Two, a dedicated leisure deck crowned by the obligatory infinity pool, where the horizon almost feels close enough to sip.

Phase Two, scheduled to open come March 2026, will even see a poolside bar and a slate of tailored spa treatment experiences designed for guests who prefer their mornings slow and their evenings salt-rimmed; along with Club InterContinental โ€“ a VIP corner for breakfast and afternoon tea while the sunโ€™s up, canapes and free-flowing wine once it retreats for another day.

But the real headline, in our opinion, involves chef Rick Stein โ€“ a man whose very name has become shorthand for honest seafood, the very finest in local produce, and, of course, coastal elegance.

With a culinary lineage that stretches from his original Cornish institution, The Seafood Restaurant in Padstow, to the beloved Bannisters in Mollymook, and Michelin Guide recognition, the British celebrity has been signed to anchor the hotelโ€™s signature restaurant: Rick Stein at Coogee Beach.

Essentially, it promises โ€œfresh seafood, simply prepared,โ€ in a must-try diner that seats 224, overlooking the water for those pleasantly long lunches and even longer evenings. This will effectively mark Steinโ€™s Sydney debut.

Shutters Restaurant & Bar will serve as the InterContinental Sydney Coogee Beachโ€™s other key cuisine hub โ€“ modern Australian with a Mediterranean twist (because what else would it be?) โ€“ and make no mistake, it has no intentions of being an afterthought nor play second string to Rick Stein at Coogee Beach.

All in all, itโ€™s a rock-solid foundation for their audacious claim of being โ€œSydneyโ€™s only luxury beachfront hotel.โ€ Bookings are now open, secure yours while youโ€™ve still got the chance.
