Sydney’s winter dining calendar has just been given a very serious reason to peak early.

SingleThread, the three-Michelin-starred Californian restaurant from Healdsburg, is heading to Bathers’ Pavilion for an exclusive four-week residency from July 28 to August 23, which, for anyone who’s not religiously following best restaurant guides, means one of the most decorated restaurants on the planet is setting up shop on Balmoral Beach for a month.

This isn’t Bathers Pavilion dipping a toe into the whole international-chef-residency thing, either, with the venue’s previous collaborations with L’Enclume in 2023 and 2025 selling out immediately.

The latter reportedly generated a 2,000-person waitlist, so if you’re even remotely interested, treat this less like a casual booking and more like trying to get Oasis tickets.

For anyone unfamiliar, SingleThread is a genuinely incredible restaurant, holding three Michelin stars and recently named joint number one on the La Liste ranking of the world’s 1,000 best restaurants.

Chef Kyle Connaughton says SingleThread is built around the relationship between farm, kitchen, and guest, meaning Sydneysiders get the chance to explore that same philosophy via Australian produce (while staying true to what defines the Sonoma County original).

On Bathers’ side, managing director Jessica Shirvington framed the collaboration as part of a broader mission to keep Sydney plugged into the sharp end of global gastronomy.

“These residencies are cumulative,” Shirvington explained. “Each one aims to raise the bar. To have the world’s joint No.1 restaurant choose Balmoral for a four-week collaboration is something we are immensely proud of.”

“We’ve demonstrated that we can deliver international residencies at a scale and standard not seen elsewhere in Australia. For diners, that translates into an experience that feels truly transportive – as close as you can get to dining at the source, without leaving Sydney.”

The SingleThread residency will take place from July 28 to August 23, with bookings opening at 10 AM this Thursday, March 12.
