Grapefruit skin apparently gives way to ripe, candied citrus flavours alongside a delightful bitterness that – wouldn’t you know it – pairs wonderfully with Bennelong signatures such as the restaurant’s fresh Sydney Rock oysters, Western Australian marron, and pasture-raised Maremma duck.
